- 1 cup freekeh (rinsed and drained)
- 1 onion (chopped)
- 2 tomatoes (diced)
- 2 carrots (sliced)
- 1 zucchini (chopped)
- 3 cloves garlic (minced)
- 1/2 tsp turmeric
- 1/2 tsp paprika
- 1/2 tsp ground coriander
- 6 cups vegetable or chicken broth
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
- Lemon wedges for serving
Heat olive oil in a large pot over medium heat.
Add chopped onions and garlic, sautéing until fragrant and translucent.
Stir in the diced tomatoes and cook until softened.
Add the carrots, zucchini, and freekeh, stirring to coat with the tomato mixture.
Sprinkle in turmeric, paprika, coriander, salt, and pepper.
Pour in the broth and bring to a boil.
Reduce heat and let simmer for 45 minutes, stirring occasionally.
Taste and adjust seasoning as needed.
Serve hot, garnished with fresh parsley and a squeeze of lemon juice.
