Authentic Shorba Freekeh Recipe

Ingredients
  

  • 1 cup freekeh (rinsed and drained)
  • 1 onion (chopped)
  • 2 tomatoes (diced)
  • 2 carrots (sliced)
  • 1 zucchini (chopped)
  • 3 cloves garlic (minced)
  • 1/2 tsp turmeric
  • 1/2 tsp paprika
  • 1/2 tsp ground coriander
  • 6 cups vegetable or chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Lemon wedges for serving

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onions and garlic, sautéing until fragrant and translucent.
  • Stir in the diced tomatoes and cook until softened.
  • Add the carrots, zucchini, and freekeh, stirring to coat with the tomato mixture.
  • Sprinkle in turmeric, paprika, coriander, salt, and pepper.
  • Pour in the broth and bring to a boil.
  • Reduce heat and let simmer for 45 minutes, stirring occasionally.
  • Taste and adjust seasoning as needed.
  • Serve hot, garnished with fresh parsley and a squeeze of lemon juice.

Notes

  • For a richer flavor, roast the freekeh before adding it to the soup.
  • You can add chickpeas or lentils for extra protein.
  • Adjust the spice level according to your preference.
