Ingredients
  

  • 500 gram minced lamb (or beef)
  • 1 small onion, finely grated
  • 2 cloves garlic, minced
  • 1 tbsp red pepper flakes
  • 1 tsp paprika
  • 1 tsp sumac
  • 1 tsp cumin
  • ½ tsp black pepper
  • ½ tsp salt
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley, chopped
  • 1 tsp chili paste (optional)
  • Metal or wooden skewers (if using wooden, soak in water for 30 minutes)

Instructions
 

  • In a large bowl, combine minced meat, grated onion, garlic, red pepper flakes, paprika, sumac, cumin, black pepper, salt, olive oil, parsley, and chili paste.
  • Mix well using your hands until the mixture is fully combined and slightly sticky.
  • Cover and refrigerate for at least 30 minutes to allow flavors to blend.
  • Divide the mixture into equal portions and shape them onto skewers, pressing firmly to ensure they stick.
  • Preheat the grill or barbecue to medium-high heat.
  • Grill the kebabs for about 4-5 minutes on each side or until fully cooked and slightly charred.
  • Serve hot with pita bread, rice, grilled vegetables, and a side of yogurt sauce.

Notes

  • For the best flavor, use high-quality minced lamb with some fat content.
  • If you don’t have a grill, you can cook the kebabs in a cast-iron pan over medium heat.
