For the Salad
- 2 large ripe avocados
- 2 medium tomatoes, diced
- 1 large cucumber, diced
- ½ small red onion, thinly sliced
- ¼ cup fresh cilantro or parsley, chopped
- 2 tablespoons pumpkin seeds or sunflower seeds, optional
For the Lime Dressing
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons fresh lime juice
- 1 teaspoon honey or maple syrup
- ½ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- ¼ teaspoon ground cumin, optional
Wash the tomatoes and cucumber thoroughly. Dice them into bite-sized pieces.
Cut the avocados in half and remove the pits. Scoop the flesh from the skin and cut it into medium-sized cubes.
In a small bowl, whisk together the olive oil, fresh lime juice, honey or maple syrup, minced garlic, salt, black pepper, and cumin if using.
Add the tomatoes, cucumber, red onion, avocado, and fresh herbs to a large serving bowl.
If using feta cheese or seeds, add them now.
Pour the lime dressing gently over the salad.
Using two large spoons, carefully toss everything together. Be gentle so the avocado pieces don't become mashed.
Serve immediately for the freshest texture and brightest appearance.
- Use ripe but firm avocados: They should yield gently when pressed but not feel mushy.
- Add avocado last: This helps prevent excessive bruising.
- Use fresh lime juice: Fresh citrus gives the dressing a brighter flavor.
- Don't overdress: Start with a small amount and add more if needed.
- Cut ingredients evenly: Similar-sized pieces make every bite more balanced.
- Serve soon after preparation: Avocado is best when fresh.
- Adjust acidity: Add extra lime juice if you prefer a tangier salad.
- Use ripe tomatoes: They provide natural sweetness and juicy texture.
