  • 2 celery stalks, sliced
  • 2 medium potatoes, diced
  • 1 zucchini, chopped
  • 1 cup green beans, trimmed and cut
  • 1 cup corn kernels
  • 1 cup chopped tomatoes
  • 6 cups vegetable broth or chicken broth
  • 1 cup cooked beans (kidney beans, white beans, or chickpeas)
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 2 tablespoons chopped fresh parsley

Instructions
 

  • Heat olive oil in a large soup pot over medium heat.
  • Add onion and garlic, and sauté until fragrant and softened.
  • Stir in carrots, celery, and potatoes, cooking for 5 minutes.
  • Add zucchini, green beans, corn, tomatoes, peas, and cooked beans.
  • Add salt, pepper, thyme, oregano, paprika, parsley, and bay leaf.
  • Stir occasionally until the vegetables are tender and the flavors are blended.
  • Remove the bay leaf before serving.
  • Serve hot with crusty bread, crackers, or a fresh side salad.
