Ingredients
  

  • 1 cup all-purpose flour
  • 1½ tsp baking powder
  • ½ tsp salt
  • ½ tsp garlic powder
  • 2 large eggs
  • ½ cup milk
  • ¼ cup melted butter
  • 1 cup shredded cheddar cheese
  • ½ cup cream cheese, softened
  • ½ cup cooked bacon, finely chopped
  • 1–2 jalapeños, finely diced (seeds removed for less heat)
  • 2 tbsp chopped green onions (optional)

Instructions
 

  • Preheat oven to 190°C (375°F) and grease a mini muffin pan.
  • In a bowl, whisk flour, baking powder, salt, and garlic powder.
  • In another bowl, whisk eggs, milk, and melted butter.
  • Combine wet and dry ingredients until just mixed.
  • Fold in cheddar cheese, cream cheese, bacon, jalapeños, and green onions.
  • Spoon batter into muffin cups, filling about ¾ full.
  • Bake for 18–20 minutes until puffed and lightly golden.
  • Cool slightly before removing and serving.

Notes

  • Use room-temperature cream cheese for easier mixing.
  • Remove jalapeño seeds to reduce spiciness.
  • Cook bacon until crispy for best texture.
  • Do not overmix batter to keep puffs light.
  • Serve warm for the best flavour.
