- 1 cup all-purpose flour
- 1½ tsp baking powder
- ½ tsp salt
- ½ tsp garlic powder
- 2 large eggs
- ½ cup milk
- ¼ cup melted butter
- 1 cup shredded cheddar cheese
- ½ cup cream cheese, softened
- ½ cup cooked bacon, finely chopped
- 1–2 jalapeños, finely diced (seeds removed for less heat)
- 2 tbsp chopped green onions (optional)
Preheat oven to 190°C (375°F) and grease a mini muffin pan.
In a bowl, whisk flour, baking powder, salt, and garlic powder.
In another bowl, whisk eggs, milk, and melted butter.
Combine wet and dry ingredients until just mixed.
Fold in cheddar cheese, cream cheese, bacon, jalapeños, and green onions.
Spoon batter into muffin cups, filling about ¾ full.
Bake for 18–20 minutes until puffed and lightly golden.
Cool slightly before removing and serving.
