Ingredients
  

  • 12 large sea scallops
  • 6 slices bacon, cut in half
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp black pepper
  • 1 tbsp maple syrup or honey (optional, for glaze)
  • Toothpicks
  • Lemon wedges (for serving)

Instructions
 

  • Preheat oven:
    Set your oven to 400°F (200°C).
  • Partially cook bacon:
    In a skillet over medium heat, cook bacon for 2-3 minutes until it begins to render fat but remains pliable. Remove and let cool slightly.
  • Prepare scallops:
    Pat scallops dry with paper towels and season with garlic powder, smoked paprika, and black pepper.
  • Wrap scallops:
    Wrap each scallop with a half slice of bacon and secure with a toothpick.
  • Bake:
    Place scallops on a baking sheet lined with parchment paper. Bake for 15 minutes, flipping halfway through.
  • Broil for crispiness:
    For extra crisp bacon, broil for 2-3 minutes at the end.
  • Glaze (optional):
    Brush with maple syrup or honey in the last 5 minutes of cooking.
  • Serve:
    Garnish with lemon wedges and serve immediately.

Notes

  • Using thick-cut bacon may require additional cooking time.
  • Avoid overcooking scallops to maintain tenderness.
