Ingredients
  

  • 3 cups sweet corn kernels, canned and drained or cooked fresh
  • 3 tablespoons mayonnaise
  • 1 tablespoon unsalted butter, melted
  • 1 tablespoon sugar
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup shredded mozzarella cheese
  • 2 scallions, finely sliced
  • 1 tablespoon finely chopped parsley, optional

Instructions
 

Prepare the Corn

  • If using canned corn, drain it thoroughly.
    Pat it dry with a paper towel to remove excess moisture.
    If using fresh corn, remove the kernels from the cob and cook until tender.

Prepare the Creamy Mixture

  • Place the corn in a large mixing bowl.
    Add the mayonnaise, melted butter, sugar, salt, and black pepper.
    Mix gently until the corn is evenly coated.

Add the Scallions

  • Stir in most of the sliced scallions, reserving a small amount for garnish.

Add Optional Ingredients

  • If desired, mix in chopped jalapeño, Korean chili flakes, crispy bacon, or Parmesan cheese.

Transfer to a Baking Dish

  • Spoon the corn mixture into a small oven-safe baking dish or skillet.
    Spread it evenly.

Add the Cheese

  • Sprinkle the mozzarella and cheddar evenly over the top.
    Make sure the cheese covers most of the corn mixture.

Bake

  • Preheat the oven to 400°F (200°C).
    Bake for approximately 10–15 minutes, or until the cheese has completely melted and the edges are bubbling.

Broil for a Golden Top

  • For a beautifully golden cheese topping, place the dish under the broiler for approximately 1–2 minutes.
    Watch carefully because the cheese can brown quickly.

Garnish

  • Remove the dish from the oven.
    Sprinkle with the remaining scallions and optional parsley.
