Ingredients
  

  • 2 boneless chicken breasts or thighs
  • 2 cups cooked brown rice or quinoa
  • 1 cup black beans (cooked or canned)
  • 1 cup corn kernels or roasted corn salsa
  • 1 avocado, sliced or mashed
  • 1 cup pico de gallo or fresh salsa
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tsp chili powder
  • 1 tsp cumin
  • 2 garlic cloves, minced
  • Salt and pepper to taste
  • Optional: chipotle crema, shredded lettuce, cilantro, jalapeños

Instructions
 

  • Marinate chicken with lime juice, olive oil, garlic, cumin, chili powder, salt, and pepper.
  • Grill or pan-sear chicken until cooked through and slightly charred.
  • Cook rice or quinoa and set as the base of the bowl.
  • Warm black beans and prepare corn salsa or roasted corn.
  • Assemble the bowl with rice, beans, grilled chicken, avocado, and pico de gallo.
  • Top with chipotle crema, cilantro, and lime wedges.

  • Marinate chicken for at least 20 minutes for better flavour.
  • Use boneless thighs for extra juiciness.
  • Fresh lime juice enhances the overall taste.
