Ingredients
  

  • 4 chicken breasts or thighs
  • 1 cup apricot preserves or jam
  • 2 tablespoons soy sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • Fresh parsley for garnish

Instructions
 

  • Preheat oven to 375°F (190°C).
  • In a bowl, mix apricot preserves, soy sauce, Dijon mustard, garlic powder, salt, and pepper.
  • Place chicken in a baking dish and pour the apricot mixture over it.
  • Bake uncovered for 40–45 minutes until the chicken is cooked through and glaze caramelizes.
  • Garnish with fresh parsley before serving.

Notes

  • Use bone-in chicken for extra flavor.
  • Fresh apricots can be used when in season.
  • Adjust sweetness by mixing in a little vinegar.
  • Serve with rice, couscous, or roasted vegetables.
