Ingredients

For the Chicken

  • 4 boneless, skinless chicken breasts, approximately 600–700 g total
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 tablespoon milk or water
  • 1½ cups panko breadcrumbs or regular breadcrumbs
  • ¼ cup finely grated Parmesan cheese, optional
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ¾ teaspoon salt, or to taste
  • 2–3 tablespoons olive oil or cooking spray

For Serving

  • 1 lemon, cut into wedges
  • 2 tablespoons fresh parsley, chopped
  • Fresh green salad
  • Roasted potatoes or mashed potatoes
  • Steamed or roasted vegetables

Instructions

Preheat the Oven

  • Preheat your oven to 220°C (425°F). Line a large baking tray with parchment paper or lightly grease a metal baking sheet.
For a crispier result, place an oven-safe wire rack over the tray if available. This allows hot air to circulate around the chicken and helps prevent the underside from becoming soggy.

Prepare the Chicken

  • Place each chicken breast between two sheets of parchment paper or inside a food-safe plastic bag.
Using a meat mallet or rolling pin, gently pound the chicken to an even thickness of approximately 1–1.5 cm. If the breasts are especially large, slice them horizontally into thinner cutlets first.
Pat the chicken dry with paper towels. Even thickness helps the chicken cook evenly and keeps the thinner portions from drying out while the thicker parts finish cooking.

Coat the Chicken

  • Take one chicken cutlet and coat it lightly in flour, shaking off any excess.
Dip it into the egg mixture, allowing the extra egg to drip back into the bowl. Then press it into the seasoned breadcrumbs, coating both sides evenly.
Press gently so the breadcrumbs adhere well. Repeat with the remaining chicken cutlets and arrange them on the prepared baking tray without overlapping.

Add a Little Oil

  • Lightly drizzle or spray the breadcrumb coating with olive oil or cooking spray.
This step helps the breadcrumbs turn golden and crisp during baking. For a particularly crunchy coating, make sure the surface is lightly and evenly coated rather than leaving large dry patches.

Bake the Chicken

  • Place the tray in the preheated oven and bake for approximately 10–12 minutes.
Carefully turn the chicken cutlets, lightly spray the other side with oil if needed, and bake for another 8–12 minutes, depending on their thickness.
The coating should become golden brown and crisp. The thickest part of each chicken cutlet must reach an internal temperature of 74°C (165°F) to ensure it is safely cooked.

Rest the Chicken

  • Remove the tray from the oven and let the schnitzel rest for approximately 2–3 minutes.
Avoid covering the chicken tightly with foil, as trapped steam can soften the crunchy breadcrumb coating.

Garnish and Serve

  • Transfer the chicken schnitzel to serving plates. Sprinkle with fresh parsley and serve immediately with lemon wedges.
For a complete meal, pair the crispy chicken with roasted potatoes, mashed potatoes, steamed green beans, or a fresh cucumber and tomato salad.

Notes

  • Pound the chicken evenly: Uniform thickness helps the cutlets cook consistently.
  • Dry the chicken first: Removing excess moisture helps the flour and breadcrumb coating adhere.
  • Use panko breadcrumbs: Panko often produces a lighter, crunchier texture than fine breadcrumbs.
  • Do not skip the flour: The flour helps the egg coating stick to the chicken.
  • Avoid overcrowding: Leave space between the cutlets so the hot air can circulate.
  • Use a thermometer: Check the thickest part of the chicken for an internal temperature of 74°C (165°F).
  • Rest briefly: A short resting period helps retain the juices without sacrificing too much crispness.
  • Serve immediately: Baked schnitzel is at its crunchiest just after cooking.
