- 2 cups cherry tomatoes
- 2 cups fresh baby spinach
- 4 large eggs
- 2 tablespoons extra virgin olive oil
- 2 garlic cloves, minced
- 1 teaspoon dried oregano
- ½ teaspoon dried thyme
- Salt, to taste
- Freshly ground black pepper, to taste
Preheat your oven to 400°F (200°C).
Place the feta block in the center of a baking dish.
Arrange the cherry tomatoes around the feta and drizzle everything with olive oil.
Sprinkle the garlic, oregano, thyme, crushed red pepper flakes, and black pepper over the dish.
Bake for 15 minutes, until the tomatoes soften and the feta becomes creamy.
