Ingredients
  

  • 4 bone-in or boneless chicken thighs or breasts
  • 2 cups baby potatoes, halved
  • 1 cup carrots, sliced
  • 1 cup green beans or bell peppers
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon paprika
  • ½ teaspoon black pepper
  • Salt to taste
  • ½ cup marinara sauce or crushed tomatoes (optional)

Instructions
 

  • Preheat the oven to 190°C (375°F).
  • Lightly grease a baking dish or sheet pan.
  • Arrange chicken and vegetables evenly in the dish.
  • Drizzle olive oil over everything.
  • Sprinkle garlic powder, oregano, basil, paprika, salt, and pepper.
  • Toss vegetables lightly to coat.
  • Spoon marinara sauce over the chicken if using.
  • Cover loosely with foil and bake for 25 minutes.
  • Remove foil and bake for another 15–20 minutes until chicken is cooked through.
