- 2 boneless, skinless chicken breasts
- 1 cup grated parmesan cheese
- 1 cup breadcrumbs (Panko or Italian-style)
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- 2 eggs, beaten
- 1 tbsp olive oil
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a shallow bowl, mix parmesan cheese, breadcrumbs, garlic powder, paprika, salt, and black pepper.
In another shallow bowl, beat the eggs.
Dip each chicken breast into the beaten eggs, then coat thoroughly in the parmesan-breadcrumb mixture.
Place the coated chicken on the prepared baking sheet and drizzle with olive oil.
Bake for 25 minutes or until the chicken is golden brown and fully cooked (internal temperature of 165°F or 75°C).
Remove from the oven and let rest for 5 minutes before serving.
