  • 6 sheets phyllo pastry, thawed
  • 3 tablespoons unsalted butter, melted (or olive oil)
  • 1 teaspoon dried oregano
  • ½ teaspoon freshly ground black pepper

For the Honey Topping

  • 3 tablespoons honey
  • 1 teaspoon fresh thyme leaves
  • 1 tablespoon toasted sesame seeds
  • ½ teaspoon lemon zest
  • ¼ teaspoon crushed red pepper flakes (optional)

For Garnish

  • Fresh thyme sprigs
  • Chopped parsley
  • Lemon wedges

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Line a baking tray with parchment paper.
  • Lay one sheet of phyllo pastry on a clean surface.
  • Brush lightly with melted butter.
  • Repeat with the remaining sheets, brushing each layer with butter before adding the next.
  • Place the block of feta in the center of the layered phyllo.
  • Sprinkle with oregano and black pepper.
  • Fold the sides of the pastry over the cheese, then roll tightly to completely enclose the feta.
  • Place seam-side down on the prepared baking tray.
  • Bake for 18–20 minutes, or until the phyllo pastry is crisp and deep golden brown.
  • Drizzle generously with the warm honey mixture.
  • Garnish with fresh thyme and parsley.
  • Serve immediately with toasted bread, pita chips, or crackers.
