Ingredients
  

For the Spaghetti Squash

  • 1 large spaghetti squash, approximately 3–4 pounds
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the Marinara Sauce

  • 3 cups marinara sauce
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon dried basil
  • Salt and black pepper, to taste

For the Ricotta Layer

  • 1½ cups ricotta cheese
  • ½ cup freshly grated Parmesan cheese
  • 1 large egg
  • 1 tablespoon fresh parsley, chopped
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt

For the Cheese Topping

  • 1½ cups shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon fresh basil or parsley, chopped

Instructions
 

Roast the Spaghetti Squash

  • Preheat the oven to 400°F (200°C).
    Carefully cut the spaghetti squash in half lengthwise. Use a spoon to remove the seeds and stringy center.
    Brush the cut surfaces with olive oil and season with salt and black pepper.
    Place the squash cut-side down on a parchment-lined baking sheet. Roast for 35–45 minutes, depending on the size of the squash.
    The squash should be tender enough to pierce easily with a fork but not so soft that the strands become mushy.
    Allow it to cool for several minutes.

Create the Squash Strands

  • Use a fork to scrape the cooked squash flesh from the skin.
    Scrape from one end to the other, gently separating the flesh into long strands.
    If the squash appears particularly wet, place the strands in a colander for several minutes and allow excess moisture to drain.
    Set aside.

Prepare the Marinara Sauce

  • Add the marinara sauce to a saucepan over medium-low heat.
    Stir in minced garlic, Italian seasoning, dried basil, and red pepper flakes if using.
    Simmer gently for 8–10 minutes, stirring occasionally.
    Taste and adjust the seasoning with salt and black pepper.
    For a meat version, brown the ground beef or Italian sausage in a separate skillet until fully cooked. Drain excess fat and stir the meat into the marinara sauce.

Assemble the First Layer

  • Reduce the oven temperature to 375°F (190°C).
    Lightly grease a 9×13-inch baking dish.
    Spread about ½ cup of marinara sauce across the bottom of the dish.
    Add half of the spaghetti squash strands and spread them into an even layer.
    Spoon half of the ricotta mixture over the squash and gently spread it across the surface.

Add the Remaining Layers

  • Spread another layer of marinara sauce over the ricotta.
    Add the remaining spaghetti squash strands.
    Spread the remaining ricotta mixture over the squash.
    Finish with the remaining marinara sauce.
    If using vegetables, distribute them between the layers. Sauté mushrooms, zucchini, onion, or bell pepper beforehand to remove excess moisture.

Add the Cheese

  • Sprinkle shredded mozzarella evenly over the entire surface.
    Add the remaining Parmesan cheese.
    Make sure the cheese reaches close to the edges of the casserole for a delicious golden crust.

Bake

  • Cover the baking dish loosely with aluminum foil.
    Bake for 25 minutes.
    Remove the foil and continue baking for another 15–20 minutes, until the cheese is melted, bubbling, and lightly golden.
    For a more deeply browned topping, broil for 1–2 minutes, watching carefully.

Rest Before Serving

  • Remove the casserole from the oven and allow it to rest for 10–15 minutes.
    This gives the layers time to settle and makes the casserole easier to portion.
    Garnish with fresh basil or parsley and serve warm.

  • Choose a large squash: A 3–4 pound spaghetti squash provides enough strands for a substantial casserole.
