Ingredients

  • 1 lb (450 g) carrots, peeled and sliced or left whole if baby carrots
  • 2 tablespoons butter
  • 2 tablespoons balsamic vinegar
  • Salt and black pepper to taste
  • 1 teaspoon fresh thyme or rosemary (optional)

Instructions
 

  • Preheat oven: Set your oven to 400°F (200°C).
  • Prepare carrots: Toss carrots with olive oil, salt, and pepper. Arrange them on a baking sheet.
  • Roast: Bake for 15 minutes until tender.
  • Make glaze: In a small saucepan, combine butter, balsamic vinegar, and honey. Simmer for 2–3 minutes until slightly thickened.
  • Coat carrots: Drizzle the glaze over the roasted carrots and toss well.
