Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/4 cup milk
  • 1 tbsp sugar
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 tbsp melted butter
  • 2 ripe bananas (sliced)
  • Optional: Powdered sugar, Nutella, whipped cream, chocolate syrup

Instructions

  • Prepare the crepe batter: In a bowl, whisk together the flour, eggs, milk, sugar, vanilla extract, and salt until smooth. Stir in the melted butter.
  • Cook the crepes: Heat a non-stick skillet over medium heat and lightly grease with butter or cooking spray. Pour about 1/4 cup of batter into the skillet and swirl to coat the bottom evenly. Cook for 1-2 minutes on each side or until golden brown. Repeat with the remaining batter.
  • Prepare the filling: While the crepes cook, slice the bananas into thin pieces.
  • Assemble the crepes: Place a crepe on a plate and add a few slices of banana in the center. Fold the crepe into quarters or roll it up.
  • Optional toppings: Add powdered sugar, whipped cream, Nutella, or chocolate syrup for extra sweetness.
  • Serve: Enjoy your banana crepes immediately while they are warm!

Notes

  • For extra flavor, you can caramelize the banana slices in a little butter and brown sugar before adding them to the crepes.
  • To make the batter ahead of time, you can refrigerate it for up to 24 hours.
  • Use a non-stick skillet for easy flipping and cooking.
