Ingredients
  

For the Muffins

  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 2 ripe bananas, mashed
  • 2 large eggs
  • ¼ cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt

For the Crumb Topping

  • ⅓ cup brown sugar
  • 2 tablespoons all-purpose flour
  • 2 tablespoons cold butter, cubed
  • ½ teaspoon cinnamon

Instructions
 

  • Preheat oven to 180°C (350°F) and line a muffin tin with paper liners.
  • In a bowl, mix flour, baking soda, and salt.
  • In another bowl, whisk melted butter and sugar, then add eggs, bananas, milk, and vanilla.
  • Gently combine wet and dry ingredients until just mixed.
  • In a small bowl, mix brown sugar, flour, cinnamon, and butter to form crumbs.
  • Fill muffin cups ¾ full with batter.
  • Sprinkle crumb topping generously over each muffin.
  • Bake for 22–25 minutes until golden and a toothpick comes out clean.
  • Cool slightly before serving.

Notes

  • Use very ripe bananas for best flavor.
  • Do not overmix the batter to keep muffins tender.
  • Crumb topping should be coarse, not smooth.
