Ingredients
  

  • 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 2 eggs (beaten)
  • 1 cup panko breadcrumbs
  • Oil for frying

For the Sauce:

  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tbsp sriracha sauce
  • 1 tsp honey
  • 1 tsp lemon juice

Instructions
 

  • In a bowl, mix flour, cornstarch, salt, pepper, paprika, and garlic powder.
  • Dip each piece of chicken into the beaten eggs, then coat with the flour mixture.
  • Roll the coated chicken in panko breadcrumbs for extra crispiness.
  • Heat oil in a deep pan to 350°F (175°C) and fry the chicken until golden brown and cooked through (about 4-5 minutes per batch).
  • Drain the fried chicken on paper towels.
  • In a separate bowl, mix mayonnaise, sweet chili sauce, sriracha, honey, and lemon juice to prepare the sauce.
  • Toss the fried chicken in the sauce until well-coated.
  • Serve hot with fresh herbs or extra dipping sauce.

Notes

  • Adjust the spice level by adding more or less sriracha.
  • For a healthier version, bake the chicken at 400°F (200°C) for 20-25 minutes instead of frying.
