Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
Place the bite-sized chicken pieces in a large bowl. Add olive oil, garlic powder, paprika, onion powder, salt, and black pepper.
Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for approximately 5–7 minutes, stirring occasionally, until the chicken is lightly browned and cooked through.
In a bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, lime juice, and garlic powder.
Taste the sauce and adjust the spice level according to your preference.
Pour about two-thirds of the bang bang sauce over the mixture and stir gently until everything is well coated.
Transfer the mixture to the prepared baking dish and spread it into an even layer.
Place the casserole in the preheated oven and bake for approximately 20–25 minutes, until hot and bubbling and the cheese is completely melted.
Remove the casserole from the oven and let it rest for 5 minutes.
Drizzle with the remaining bang bang sauce and garnish with chopped green onions, cilantro, sesame seeds, or extra sriracha.
Serve warm.
