Ingredients
  

For the Fruit Filling

  • 4 cups fresh fruit, sliced or chopped
  • ½ cup granulated sugar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch, optional
  • ¼ teaspoon ground cinnamon, optional

For the Batter

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • ½ cup unsalted butter, melted

For Serving

  • Vanilla ice cream
  • Whipped cream
  • Fresh fruit or berries, optional

Instructions
 

  • Preheat your oven to 350°F (175°C). Position the oven rack in the center.
  • Wash and prepare the fruit. Remove pits, stems, and cores as necessary, then cut larger fruits into bite-sized pieces.
    Place the fruit in a bowl and gently toss it with sugar, lemon juice, and vanilla extract. If using very juicy fruit, add the cornstarch and mix gently.
  • Pour the melted butter into a 9 × 13-inch baking dish.
    Do not stir the butter into anything. It will help create a rich, golden crust as the cobbler bakes.
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
    Gradually pour in the milk and vanilla extract. Whisk just until a smooth batter forms. Avoid overmixing.
  • Pour the batter evenly over the melted butter.
    Do not stir.
    Carefully spoon the prepared fruit over the batter, distributing it evenly across the dish.
    The batter will rise around the fruit naturally during baking.
  • Place the dish in the preheated oven and bake for 40–45 minutes, or until the top is golden brown and the fruit is bubbling around the edges.
    The center should look set rather than wet.
  • Remove the cobbler from the oven and allow it to rest for 10–15 minutes.
    This gives the fruit juices time to thicken slightly and makes the cobbler easier to serve.
  • Spoon the warm cobbler into individual bowls and top with vanilla ice cream or whipped cream.
    Serve immediately for the best texture.
