- 1 lb ground beef or stew meat
- 1 small head of cabbage, chopped
- 1 onion, diced
- 3 carrots, sliced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1 tsp dried oregano
- 1 tsp Worcestershire sauce
- 2 tbsp olive oil
- 2 tbsp potatoes, diced (optional)
Sauté the beef: In a large pot, heat olive oil over medium heat. Add ground beef or stew meat and cook until browned. Drain excess fat if needed.
Add aromatics: Stir in onions, carrots, and garlic. Cook for 3-4 minutes until softened.
Build the broth: Pour in beef broth, diced tomatoes, Worcestershire sauce, and seasonings. Stir well.
Add cabbage: Stir in chopped cabbage and potatoes (if using).
Simmer: Cover and let the soup simmer on low heat for about 45 minutes to 1 hour, until the vegetables are tender and flavors are well combined.
Taste and adjust: Adjust seasonings as needed.
