Beef Enchiladas with Flour Tortillas

Ingredients
  

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 1 bell pepper, diced
  • 2 garlic cloves, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • ½ tsp paprika
  • Salt and black pepper to taste
  • 1 can enchilada sauce (10 oz)
  • 2 cups shredded cheddar or Mexican blend cheese
  • 8 flour tortillas
  • Fresh cilantro for garnish

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Heat oil in a skillet, sauté onion, pepper, and garlic until soft.
  • Add ground beef and cook until browned. Stir in chili powder, cumin, paprika, salt, and pepper.
  • Spread ½ cup enchilada sauce on the bottom of a baking dish.
  • Place beef mixture inside tortillas, roll tightly, and arrange seam-side down.
  • Pour remaining enchilada sauce over tortillas and sprinkle with cheese.
  • Bake uncovered for 20–25 minutes until cheese is melted and bubbly.
  • Garnish with fresh cilantro before serving.

Notes

  • Use lean beef for less grease.
  • Flour tortillas roll easier than corn tortillas.
  • Add beans or corn to the filling for variety.
  • Homemade enchilada sauce enhances flavour.
  • Leftovers reheat well in the oven.
