Ingredients
  

For the Broth:

  • 1½ lbs beef bones
  • 1 onion, halved
  • 1 piece ginger, halved
  • 2 star anise
  • 1 cinnamon stick
  • 3 cloves
  • 1 tablespoon coriander seeds
  • 1 tablespoon fish sauce

For the Soup:

  • 8 oz rice noodles
  • 8 oz beef sirloin or eye of round, thinly sliced
  • Bean sprouts
  • Fresh basil, cilantro, and mint
  • Lime wedges
  • Sliced green chilies

Instructions
 

  • Roast beef bones, onion, and ginger until lightly charred.
  • Simmer bones with spices in water for 1½–2 hours.
  • Strain broth; season with fish sauce and salt.
  • Cook rice noodles according to package instructions.
  • Place noodles in bowls, top with raw beef slices.
  • Pour hot broth over beef to cook it gently.
  • Serve with herbs, sprouts, lime, and chilies.

  • Clear broth is key to authentic pho.
  • Skim impurities while simmering.
