Ingredients
  

  • 1½–2 lb beef tenderloin, butterflied
  • 1 cup cooked lobster meat, chopped
  • 3 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 2 tbsp heavy cream or cream cheese
  • 1 tbsp fresh parsley, chopped
  • 1 tsp lemon zest
  • Salt and black pepper, to taste
  • 1 tbsp olive oil

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Melt butter in a pan and sauté garlic until aromatic.
  • Add lobster meat, cream, parsley, lemon zest, salt, and pepper; mix gently and cool slightly.
  • Season the butterflied beef tenderloin evenly.
  • Spread the lobster filling over the beef, roll tightly, and secure with kitchen twine.
  • Sear in olive oil until browned on all sides.
  • Roast in the oven until desired doneness is reached.
  • Rest for 10 minutes before slicing and serving.
