For the Beef Skewers
- 600 g beef sirloin, ribeye, or tenderloin
- 2 bunches green onions
- 1 tablespoon neutral cooking oil
- ¼ teaspoon black pepper
- 1 tablespoon toasted sesame seeds, for garnish
- 2 green onions, thinly sliced, for garnish
For the Tare Sauce
- ¼ cup soy sauce
- ¼ cup mirin
- 2 tablespoons sake
- 2 tablespoons brown sugar
- 1 teaspoon grated fresh ginger
- 1 clove garlic, finely grated or minced
- 1 teaspoon sesame oil
- 1 teaspoon rice vinegar, optional
For the Skewers
- Bamboo skewers, soaked in water for at least 30 minutes
Soak the Bamboo Skewers
Place the bamboo skewers in a large bowl of water.Soak them for at least 30 minutes. This helps prevent the exposed portions of the skewers from burning during grilling. If using metal skewers, soaking is not necessary.
Prepare the Beef
Trim away any tough pieces of connective tissue from the beef.Cut the beef into bite-sized cubes approximately 1–1½ inches (2.5–4 cm) in size.Try to keep the pieces similar in size so they cook evenly.Pat the beef dry with paper towels.
Prepare the Green Onions
Wash the green onions thoroughly.Cut the white and light-green portions into pieces approximately the same size as the beef.Set aside. The green onions will become lightly charred and sweet during grilling.
Make the Tare Sauce
Add soy sauce, mirin, sake, brown sugar, ginger, garlic, sesame oil, and rice vinegar to a small saucepan.Place over medium heat.Bring the mixture to a gentle simmer.Cook for approximately 5–7 minutes, stirring occasionally. The sauce should become slightly thicker and glossy.Do not reduce it too aggressively because it will thicken further as it cools.
Cool the Sauce
Remove the tare sauce from the heat.Allow it to cool for several minutes.
Marinate the Beef
Place the beef pieces in a bowl.Add approximately 2–3 tablespoons of the cooled tare sauce.Toss until the beef is evenly coated.Cover and refrigerate for approximately 30 minutes.Avoid excessively long marinating because the salty soy-based sauce can affect the texture of the beef.
Prepare the Skewers
Drain the bamboo skewers.Thread the beef pieces onto the skewers, alternating occasionally with pieces of green onion.Do not pack the meat too tightly.Leave a small amount of space between pieces so heat can circulate around the beef.
Prepare the Grill
Preheat an outdoor grill or indoor grill pan to medium-high heat.Lightly oil the cooking surface. If using a broiler, position the rack approximately 5–6 inches from the heat source and preheat thoroughly.
Grill the Beef Yakitori
Place the skewers on the hot grill.Cook for approximately 2–3 minutes per side, turning regularly.Brush the beef lightly with tare sauce during the final few minutes of cooking.Continue turning and brushing until the beef develops a beautifully caramelized exterior.Cooking time depends on the size of the beef pieces and desired doneness. For food safety, use a thermometer to check the thickest piece and cook to the appropriate safe internal temperature for the beef cut and desired preparation.
Rest the Skewers
Transfer the cooked beef yakitori to a serving plate.Allow the skewers to rest for approximately 2–3 minutes. This helps the juices redistribute and keeps the beef tender.
Garnish and Serve
Sprinkle the skewers with toasted sesame seeds and sliced green onions.Serve immediately with extra tare sauce on the side. For a spicy finish, add shichimi togarashi or Japanese chili flakes.
- Choose tender beef: Sirloin, ribeye, and tenderloin are excellent choices for skewers.
- Cut evenly: Similar-sized beef pieces cook more consistently.
- Soak bamboo skewers: This helps reduce burning during grilling.
- Do not overcrowd the skewers: Small spaces between pieces encourage better browning.
- Separate raw and cooked sauce: Always keep sauce that touches raw beef separate from the final serving sauce.
- Watch the glaze: The sugar in tare can caramelize quickly and burn if exposed to excessive heat.
- Avoid overcooking: Beef becomes less tender when cooked for too long.
- Rest before serving: A brief resting period helps maintain juicy beef.
