  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • ¾ cup beer (lager, ale, or your favorite brew)
  • ¾ cup milk
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper (optional, for heat)
  • 8 oz (2 cups) sharp cheddar cheese, shredded
  • 4 oz cream cheese, softened
  • Salt and pepper to taste
  • Soft pretzels, tortilla chips, or veggies for serving

Instructions
 

  • In a saucepan over medium heat, melt the butter.
  • Whisk in the flour and cook for 1–2 minutes until lightly golden (this creates a roux).
  • Slowly pour in the beer and milk while whisking constantly to avoid lumps.
  • Stir in Dijon mustard, garlic powder, paprika, and cayenne pepper.
  • Lower the heat and add the cream cheese; stir until melted and smooth.
  • Gradually add shredded cheddar cheese, stirring until completely melted and creamy.
  • Season with salt and pepper to taste.
  • Serve warm with soft pretzels, breadsticks, or chips.

Notes

  • Use a sharp or extra-sharp cheddar for bold flavour.
  • Avoid pre-shredded cheese, as it may make the dip grainy.
  • Choose a lager or ale — darker beers add deeper, richer flavour.
