For the Salad

  • 4 medium beets, washed and trimmed
  • 4 cups mixed salad greens
  • 4 ounces goat cheese, crumbled
  • ½ cup walnuts, toasted
  • ¼ small red onion, thinly sliced
  • 2 tablespoons fresh parsley, chopped

For the Balsamic Vinaigrette

  • 3 tablespoons extra virgin olive oil
  • 1½ tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • Preheat the oven to 400°F (200°C). Wrap each beet individually in aluminum foil and place on a baking sheet. Roast for 40–45 minutes or until fork-tender.
  • Allow the roasted beets to cool slightly. Rub away the skins using paper towels and slice the beets into wedges or rounds.
  • Place walnuts in a dry skillet over medium heat and toast for 3–4 minutes until fragrant. Let cool.
  • Whisk together olive oil, balsamic vinegar, Dijon mustard, honey, salt, and black pepper until smooth and well combined.
  • Arrange mixed greens on a serving platter. Top with roasted beets, red onion slices, goat cheese, and toasted walnuts.
  • Drizzle the balsamic vinaigrette over the salad and garnish with fresh parsley. Serve immediately.
