Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • 2 tablespoons milk, if needed
  • 1 tablespoon powdered sugar, optional for serving

Instructions
 

Prepare the Dry Ingredients

  • In a medium bowl, whisk together the flour, baking powder, and salt. If you are using cinnamon, add it at this stage. Set the mixture aside.

Cream the Butter and Sugar

  • Place the softened butter and granulated sugar in a large mixing bowl. Beat until light, creamy, and fluffy. This usually takes about 2–3 minutes with an electric mixer.

Add the Eggs

  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. The mixture should become smooth and fragrant.

Make the Dough

  • Gradually add the dry ingredients to the butter mixture. Mix just until a soft dough forms. Do not overmix. If the dough feels unusually dry, add milk one tablespoon at a time.

Chill the Dough

  • Cover the dough and refrigerate it for approximately 30 minutes. Chilling makes the dough easier to handle and helps prevent excessive spreading during cooking.

Preheat the Iron

  • Preheat your Belgian cookie iron or waffle-style cookie maker according to the manufacturer's instructions. Lightly grease the plates if necessary.

Cook the Cookies

  • Take small portions of dough and place them onto the hot iron. Close the lid gently and cook until the cookies become golden brown and crisp.

Cool Completely

  • Carefully remove each cookie using a wooden or silicone utensil. Place the cookies on a wire rack in a single layer. Allow them to cool completely before storing.

Notes

  • Use softened butter: Room-temperature butter blends much more easily with sugar.
  • Do not overmix: Overworking the dough can make the cookies tougher.
