Ingredients

For the Blueberry Filling

  • 5 cups fresh blueberries (or frozen)
  • ¾ cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • ¼ teaspoon ground cinnamon
  • Pinch of salt

For the Cobbler Topping

  • 1½ cups all-purpose flour
  • ⅓ cup granulated sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup cold unsalted butter, cubed
  • ½ cup whole milk
  • 1 teaspoon vanilla extract

Instructions

  • Preheat your oven to 375°F (190°C). Grease a 9-inch baking dish.
  • Combine blueberries, sugar, cornstarch, lemon juice, lemon zest, vanilla, cinnamon, and salt. Mix gently and spread into the prepared baking dish.
  • In a large bowl, whisk together flour, sugar, baking powder, and salt.
  • Cut the cold butter into the flour mixture until coarse crumbs form.
  • Stir in milk and vanilla just until combined. Avoid overmixing.
  • Drop spoonfuls of batter evenly over the blueberry filling, leaving a few gaps for steam to escape.
  • Sprinkle coarse sugar on top for extra crunch if desired.
  • Bake for 40–45 minutes, or until the topping is golden brown and the blueberry filling is bubbling.
  • Allow the cobbler to cool for about 10–15 minutes before serving.
  • Serve warm with vanilla ice cream, whipped cream, or a drizzle of heavy cream.

Notes

  • Fresh blueberries provide the best flavor during peak season.
  • Frozen blueberries can be used without thawing.
  • Lemon juice brightens the berry flavor.
  • Cornstarch creates a thick, glossy filling.
  • Do not overmix the topping batter.
  • Leave small gaps in the topping for even baking.
  • Let the cobbler rest before serving to allow the filling to set.
  • Store leftovers refrigerated for up to 4 days.
