  • 1 teaspoon smoked paprika
  • ½ teaspoon cumin
  • 1 bay leaf
  • 1 tablespoon olive oil

Instructions
 

Soak the Beans

  • Rinse and sort the pinto beans.Place in a large bowl and cover with water.Soak overnight for 8 hours.Drain and rinse before cooking.

Sauté Aromatics

  • Heat olive oil in a large pot.Add diced onion and cook until softened.Stir in garlic and cook for 1 minute.

Cook the Beans

  • Add soaked beans to the pot.Pour in broth or water.Add ham hock, bay leaf, paprika, cumin, pepper, and salt.Bring to a boil.Reduce heat and simmer uncovered for about 2 hours.

Finish the Dish
