- 1 lb cooked lobster meat (claw, knuckle, and tail)
- 2 tbsp unsalted butter, melted
- 2 tbsp mayonnaise (for Maine-style)
- 1 tsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika (optional)
- 1 tbsp chopped chives or parsley
- 4 split-top hot dog buns
- Extra butter for toasting buns
- Lettuce leaves (optional)
Prepare the lobster meat: Chop the cooked lobster into bite-sized pieces.
For Maine-style rolls: In a bowl, mix lobster meat with mayonnaise, lemon juice, salt, pepper, and chives. Chill for 10 minutes.
For Connecticut-style rolls: Heat butter in a pan over low heat. Toss lobster meat in the melted butter until warmed through.
Toast the buns: Spread butter on the sides of the hot dog buns and toast them in a skillet until golden brown.
Assemble the rolls: Place lobster mixture in the toasted buns. Add lettuce if desired.
Serve immediately with chips, coleslaw, or fries.
