- 2 boneless ribeye or sirloin steaks (6-8 oz each)
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 2 cloves garlic, minced
- 1 small shallot, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp fresh thyme
- 1/2 cup beef broth
- 1/4 cup red wine (optional)
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- 1 tsp fresh parsley, chopped (for garnish)
Prepare the steak: Season both sides of the steaks with salt, black pepper, and fresh thyme. Sear the steak: Heat olive oil in a skillet over medium-high heat. Sear the steaks for 3-4 minutes per side until browned. Remove from the pan and let them rest. Sauté the aromatics: In the same skillet, melt butter and add shallots and garlic. Sauté until fragrant. Deglaze the pan: Pour in red wine (if using) and scrape up browned bits. Simmer for 2 minutes. Add the sauce ingredients: Stir in beef broth, Dijon mustard, and Worcestershire sauce. Simmer for another 3-4 minutes until the sauce thickens. Return the steaks:Place the steaks back into the skillet and coat with the sauce. Cook for another 2 minutes to absorb flavors. Serve: Garnish with fresh parsley and serve immediately.
