  • ⅓ cup vegetable oil
  • 1 tablespoon white vinegar
  • 1 teaspoon vanilla extract

For the Cream Cheese Filling

  • 8 oz cream cheese, softened
  • ⅓ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a muffin tray with cupcake liners.
  • In a mixing bowl, beat cream cheese until smooth. Add sugar, egg, and vanilla extract. Mix until creamy, then fold in chocolate chips.
  • In another bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt. Add water, oil, vinegar, and vanilla extract. Stir until smooth and lump-free.
  • Fill each cupcake liner about two-thirds full with chocolate batter. Add a spoonful of cream cheese filling to the center of each cupcake.
  • Bake for 20–22 minutes or until the cupcakes are set and a toothpick inserted into the cake portion comes out clean.
  • Allow cupcakes to cool in the tray for 10 minutes before transferring to a wire rack. Serve slightly warm or chilled.
