Ingredients
  

For the Goat

  • 750 g goat meat, bone-in, cut into medium pieces
  • ½ cup plain yogurt
  • 1 tablespoon ginger-garlic paste
  • ½ teaspoon turmeric powder
  • 1 teaspoon salt
  • 1 teaspoon freshly crushed black pepper

For the Curry

  • 3 tablespoons cooking oil
  • 2 large onions, finely sliced
  • 2 medium tomatoes, finely chopped
  • 2 green chilies, slit
  • 1 tablespoon ginger-garlic paste
  • 1½ tablespoons freshly coarsely crushed black pepper
  • 1 teaspoon red chili powder
  • 1½ teaspoons coriander powder
  • ½ teaspoon cumin powder
  • ½ teaspoon turmeric powder
  • 2 to 2½ cups hot water

Whole Spices

  • 1 teaspoon cumin seeds
  • 1 small cinnamon stick
  • 3–4 cloves
  • 2 green cardamom pods
  • 1 bay leaf
  • ½ teaspoon fennel seeds

For Garnishing

  • 2 tablespoons fresh coriander leaves, chopped
  • ½ teaspoon freshly crushed black pepper
  • A few curry leaves, optional

Instructions
 

Marinate the Goat

  • Place the goat meat in a large bowl. Add yogurt, ginger-garlic paste, turmeric, salt, and 1 teaspoon crushed black pepper. Mix thoroughly so every piece is coated.
    Cover and refrigerate for about 30 minutes. For deeper flavor, you can marinate it for 2–4 hours.

Prepare the Pepper Masala

  • Lightly dry-roast the cumin seeds, fennel seeds, cloves, cinnamon, and cardamom in a pan over low heat until fragrant.
    Allow them to cool slightly and crush them coarsely. Do not grind them into an extremely fine powder; a slightly coarse texture gives the curry a more rustic flavor.

Sauté the Aromatics

  • Heat oil in a heavy-bottomed pot or pressure cooker. Add the bay leaf and the prepared whole-spice mixture.
    Add sliced onions and sauté until they become golden brown.
    Add green chilies and ginger-garlic paste. Cook for 1–2 minutes until the raw aroma disappears.

Cook the Tomato Masala

  • Add chopped tomatoes and cook until they become soft and the oil begins to separate from the masala.
    Add turmeric powder, red chili powder, coriander powder, cumin powder, and some of the crushed black pepper.
    Mix well and cook for another 2–3 minutes.

Add the Goat Meat

  • Add the marinated goat meat and mix thoroughly with the masala.
    Cook uncovered over medium-high heat for about 8–10 minutes, stirring occasionally. This step helps seal the meat and allows the spices to coat it properly.

Cook Until Tender

  • Add hot water and salt according to taste. Cover and cook until the goat becomes tender.
    Pressure cooker: Cook for approximately 5–7 whistles, depending on the age and tenderness of the meat.
    Stovetop: Cover and simmer for approximately 60–90 minutes, or until tender, adding additional hot water if necessary.

Finish with Fresh Pepper

  • Once the meat is completely tender, simmer uncovered for another 5–10 minutes to thicken the gravy.
    Add the remaining freshly crushed black pepper and mix well.

Garnish and Serve

  • Turn off the heat and garnish with fresh coriander leaves and a little freshly crushed black pepper.
    Rest the curry for 5–10 minutes before serving. This allows the flavors to settle and intensify.

Notes

  • Use bone-in goat meat for a richer and more flavorful curry.
  • Freshly crushed black pepper gives much better flavor than pre-ground pepper.
  • Goat meat can vary considerably in tenderness, so cooking time may need adjustment.
  • Do not burn the whole spices while roasting them.
  • Golden-browned onions add important depth to the curry.
  • Adjust the amount of black pepper according to your preferred spice level.
  • Allowing the curry to rest for a few minutes before serving improves its flavor.
  • The curry may taste even better after resting overnight because the spices have more time to blend.
