Blackberry Base
- 2 cups fresh blackberries
- 2 tablespoons sugar or honey (adjust to taste)
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest
Cocktail Mixture
- ¾ cup gin
- 1½ cups tonic water (chilled)
- 1–2 tablespoons simple syrup (optional)

- Crushed ice (for texture before freezing)
In a blender, combine blackberries, sugar (or honey), lime juice, and lime zest.
Blend until smooth, then strain if you prefer a seedless mixture.
In a bowl, mix the blackberry purée with gin and simple syrup.
Slowly stir in chilled tonic water to preserve its fizz.
Place a few whole blackberries and lime slices into each popsicle mold.
Pour the mixture carefully into molds, leaving a small gap at the top.
Insert popsicle sticks.
Freeze for at least 6–8 hours or overnight until solid.
To unmold, briefly run warm water over the outside of the molds.
Serve immediately for a refreshing, boozy summer treat.
