Ingredients
Blackberry Base
- 2 cups fresh blackberries
- 2 tablespoons sugar or honey (adjust to taste)
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest
Cocktail Mixture
- ¾ cup gin
- 1½ cups tonic water (chilled)
- 1–2 tablespoons simple syrup (optional)
Optional Add-Ins
- Extra whole blackberries
- Lime slices (thinly cut)
- Mint leaves
- Crushed ice (for texture before freezing)
Instructions
- In a blender, combine blackberries, sugar (or honey), lime juice, and lime zest.
- Blend until smooth, then strain if you prefer a seedless mixture.
- In a bowl, mix the blackberry purée with gin and simple syrup.
- Slowly stir in chilled tonic water to preserve its fizz.
- Place a few whole blackberries and lime slices into each popsicle mold.
- Pour the mixture carefully into molds, leaving a small gap at the top.
- Insert popsicle sticks.
- Freeze for at least 6–8 hours or overnight until solid.
- To unmold, briefly run warm water over the outside of the molds.
- Serve immediately for a refreshing, boozy summer treat.
