For the crust:
- 1 ½ cups graham cracker crumbs
- ½ cup finely chopped pistachios
- ¼ cup granulated sugar
- 6 tbsp unsalted butter, melted
For the cheesecake filling:
- 16 oz cream cheese, softened
- ¾ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup sour cream
- ¼ cup finely ground pistachios
For the blackberry swirl:
- 1 cup fresh or frozen blackberries
- 2 tbsp sugar
- 1 tsp lemon juice
- 1 tsp cornstarch dissolved in 1 tsp water
Prepare the crust: Preheat oven to 325°F (165°C). Line an 8x8-inch pan with parchment paper.
Combine graham cracker crumbs, pistachios, sugar, and melted butter. Press evenly into the bottom of the pan. Bake for 8–10 minutes, then let cool.
Make the blackberry sauce: In a small saucepan, combine blackberries, sugar, and lemon juice. Cook over medium heat for 5–7 minutes until berries break down. Add cornstarch slurry and cook for another minute until thickened. Strain to remove seeds and cool slightly.
Prepare the cheesecake: Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing on low speed. Blend in vanilla, sour cream, and ground pistachios until creamy.
Pour the cheesecake mixture over the cooled crust. Spoon the blackberry sauce on top and swirl gently with a knife for a marbled effect.
Bake for 35–40 minutes, or until the center is just set.
Cool completely, then refrigerate for at least 2 hours before slicing.
Garnish with chopped pistachios and fresh blackberries if desired.
