Ingredients
  

For the Salad

  • 12 ounces rotini or bowtie pasta
  • 10 slices bacon, cooked and crumbled
  • 2 cups cherry tomatoes, halved
  • 3 cups chopped romaine lettuce
  • ½ cup finely diced red onion
  • 2 tablespoons chopped fresh parsley

For the Dressing

  • ¾ cup mayonnaise
  • ¼ cup sour cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt (or to taste)

Instructions
 

  • Cook the pasta according to the package directions until al dente.
  • Drain the pasta and rinse under cold water until completely cooled. Drain well.
  • In a medium bowl, whisk together the mayonnaise, sour cream, Dijon mustard, lemon juice, garlic powder, onion powder, salt, pepper, and chopped chives.
  • In a large mixing bowl, combine the cooled pasta, bacon, tomatoes, red onion, and cheddar cheese if using.
  • Pour the dressing over the pasta mixture and toss gently until evenly coated.
  • Cover and refrigerate for 30 minutes to allow the flavors to blend.
  • Just before serving, gently fold in the chopped romaine lettuce and parsley to keep them crisp.
  • Garnish with extra bacon, tomatoes, parsley, and freshly cracked black pepper.
  • Serve chilled and enjoy.
