Ingredients

  • 1 cup milk (dairy or plant-based)
  • 1 cup blueberries (fresh or frozen)
  • 1 ripe banana (mashed) or ¼ cup honey/maple syrup
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions
 

  • Preheat oven to 180°C (350°F) and lightly grease a baking dish.
  • In a bowl, mix oats, baking powder, cinnamon, and salt.
  • Add milk, mashed banana (or sweetener), and vanilla extract; mix well.
  • Gently fold in blueberries.
  • Pour mixture into the prepared baking dish.
  • Bake for 30 minutes or until set and lightly golden.
  • Cool slightly before serving.
