- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon cinnamon (optional)
- ½ cup unsalted butter (softened)
- ¾ cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 ripe bananas (mashed)
- 1 cup fresh or frozen blueberries
- 2 tablespoons milk or yogurt
- 1 tablespoon flour (to coat blueberries)
Preheat Oven: Preheat oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
Mix Dry Ingredients: In a bowl, whisk together flour, baking soda, salt, and cinnamon.
Cream Butter and Sugar: In another large bowl, beat butter and brown sugar until fluffy. Add eggs and vanilla extract; mix well.
Add Bananas and Milk: Stir in mashed bananas and milk (or yogurt) until combined.
Combine: Gradually fold in the dry ingredients until just mixed — do not overmix.
Add Blueberries: Toss blueberries in 1 tablespoon of flour to prevent sinking, then gently fold them into the batter.
Bake: Pour batter into the loaf pan. Bake for 55–60 minutes or until a toothpick inserted into the center comes out clean.
Cool and Serve: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack. Slice and serve warm or at room temperature.
- Use overripe bananas for maximum sweetness and moisture.
- Fresh blueberries work best, but frozen ones can be used (do not thaw).
- Add chopped nuts for extra crunch.
- Replace butter with coconut oil for a dairy-free version.
- The bread tastes even better the next day as the flavours blend beautifully.
