Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon (optional)
  • ½ cup unsalted butter (softened)
  • ¾ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 ripe bananas (mashed)
  • 1 cup fresh or frozen blueberries
  • 2 tablespoons milk or yogurt
  • 1 tablespoon flour (to coat blueberries)

Instructions
 

  • Preheat Oven: Preheat oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
  • Mix Dry Ingredients: In a bowl, whisk together flour, baking soda, salt, and cinnamon.
  • Cream Butter and Sugar: In another large bowl, beat butter and brown sugar until fluffy. Add eggs and vanilla extract; mix well.
  • Add Bananas and Milk: Stir in mashed bananas and milk (or yogurt) until combined.
  • Combine: Gradually fold in the dry ingredients until just mixed — do not overmix.
  • Add Blueberries: Toss blueberries in 1 tablespoon of flour to prevent sinking, then gently fold them into the batter.
  • Bake: Pour batter into the loaf pan. Bake for 55–60 minutes or until a toothpick inserted into the center comes out clean.
  • Cool and Serve: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack. Slice and serve warm or at room temperature.

Notes

  • Use overripe bananas for maximum sweetness and moisture.
  • Fresh blueberries work best, but frozen ones can be used (do not thaw).
  • Add chopped nuts for extra crunch.
  • Replace butter with coconut oil for a dairy-free version.
