For the Bars

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon flour, for tossing blueberries

For the Crumb Topping

  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/4 teaspoon cinnamon
  • 1/4 cup unsalted butter, melted

Instructions
 

  • Preheat the oven to 175°C (350°F). Grease and line a 9x9-inch baking pan with parchment paper.
  • In a bowl, whisk together the flour, baking powder, and salt.
  • In a large mixing bowl, beat the butter and sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the sour cream, milk, and vanilla extract.
  • Gradually add the dry ingredients and mix until just combined.
  • Toss the blueberries with 1 tablespoon flour, then gently fold them into the batter.
  • Spread the batter evenly into the prepared pan.
  • In a small bowl, mix the crumb topping ingredients until crumbly, then sprinkle over the batter.
  • Bake for 35 to 40 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool in the pan, then lift out and slice into bars.
  • Drizzle with optional glaze before serving, if desired.
