- 1.5–2 lbs thinly sliced beef (top round or flank steak)
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic (minced)
- 2 tbsp fresh parsley (chopped)
- 2 tbsp olive oil
- 1/2 tsp black pepper
- Kitchen twine or toothpicks
- 2 cups marinara sauce
- 1 can (14 oz) crushed tomatoes
- 1/2 cup beef broth
- 1 small onion (chopped)
- 2 cloves garlic (minced)
- 1 tsp dried oregano
- 1 tsp dried basil
Prepare the filling: In a bowl, mix breadcrumbs, Parmesan cheese, garlic, parsley, olive oil, salt, and pepper.
Lay out beef slices and pound lightly if needed for even thickness.
Spoon the filling onto each slice and roll tightly. Secure with twine or toothpicks.
Optional: Sear the rolls in a pan until browned on all sides for added flavor.
Place chopped onion and garlic in the slow cooker.
Stir to combine, then place beef rolls into the sauce.
Once tender, remove twine/toothpicks carefully.
Serve hot with sauce spooned over the top.
