Ingredients

  • 2 pounds ground beef
  • 1 pound Italian sausage
  • 2 cans (14.5 oz each) diced tomatoes
  • 2 cans kidney beans, drained and rinsed
  • 1 can pinto beans, drained
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 can (6 oz) tomato paste
  • 2 cups beef broth
  • 1 bottle beer
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • Salt and pepper to taste

Instructions

  • Brown the meat: In a large pot or Dutch oven, cook ground beef and sausage over medium heat until browned. Drain excess fat.
  • Add vegetables: Stir in onion, garlic, and green bell pepper. Cook for 5 minutes until softened.
  • Add seasonings: Sprinkle in chili powder, cumin, oregano, paprika, and cayenne pepper. Mix well.
  • Add liquids and beans: Pour in tomatoes, tomato paste, beef broth, and beer. Add the beans and stir thoroughly.
  • Simmer: Lower heat and let it simmer for 1 to 1.5 hours, stirring occasionally.
  • Serve: Adjust salt and pepper to taste. Garnish with shredded cheese, sour cream, or chopped green onions.

Notes

  • The chili’s flavor intensifies when made a day in advance.
  • You can substitute sausage with turkey for a lighter version.
  • Adjust the cayenne pepper for desired spice level.
  • Freeze leftovers for up to three months.
  • Use dark beer for a richer, more robust flavour.
