  • 2 cups (250 g) all-purpose flour
  • 1½ teaspoons baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves, optional

Wet Ingredients

  • ½ cup (115 g) unsalted butter, softened
  • ¾ cup (150 g) dark brown sugar
  • ½ cup (170 g) molasses or dark syrup
  • 2 large eggs
  • 2 tablespoons freshly grated ginger
  • 1 teaspoon vanilla extract
  • ¾ cup (180 ml) hot water or strong ginger tea

Instructions
 

Preheat the Oven

  • Preheat your oven to 350°F (175°C).
    Grease and line an 8-inch square cake pan or a similar-sized round pan with parchment paper.

Cream the Butter and Sugar

  • In another large bowl, beat the softened butter and dark brown sugar until creamy and well combined.
    The mixture should look light and smooth.

Add the Molasses

  • Pour in the molasses or dark syrup.
    Mix until fully incorporated.
    This ingredient gives the cake its beautiful dark color and rich flavor.

Add the Eggs

  • Add the eggs one at a time.
    Beat well after each addition.

Add the Fresh Ginger

  • Stir in the freshly grated ginger and vanilla extract.
    Add the optional rum or rum extract if using.

Add the Dry Ingredients

  • Gradually add the dry ingredient mixture to the wet ingredients.
    Mix gently until partially combined.

Add the Hot Liquid

  • Slowly pour in the hot water or strong ginger tea.

    The spices will continue to develop.
