- 2 cups dried navy beans
- 4 cups water (for soaking)
- ½ pound salt pork or thick-cut bacon, diced
- 1 medium onion, chopped
- ⅓ cup molasses
- 2 tablespoons brown sugar
- 1 teaspoon dry mustard
- ½ teaspoon black pepper
Soak beans overnight in water; drain and rinse.
Preheat oven to 325°F (165°C).
Parboil beans for 30 minutes until slightly tender; drain.
Place pork in the bottom of a baking dish, followed by onions and beans.
Mix molasses, brown sugar, mustard, salt, and pepper with hot water.
Pour mixture over beans until just covered.
Add water if needed to prevent drying.
