Ingredients
  

  • 2 cups dried navy beans
  • 4 cups water (for soaking)
  • ½ pound salt pork or thick-cut bacon, diced
  • 1 medium onion, chopped
  • ⅓ cup molasses
  • 2 tablespoons brown sugar
  • 1 teaspoon dry mustard
  • ½ teaspoon black pepper

Instructions
 

  • Soak beans overnight in water; drain and rinse.
  • Preheat oven to 325°F (165°C).
  • Parboil beans for 30 minutes until slightly tender; drain.
  • Place pork in the bottom of a baking dish, followed by onions and beans.
  • Mix molasses, brown sugar, mustard, salt, and pepper with hot water.
  • Pour mixture over beans until just covered.
  • Add water if needed to prevent drying.
