- 1 1/2 cups pecan halves
- 3 large eggs
- 1 cup light corn syrup
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 3 tablespoons bourbon
- 1 teaspoon vanilla extract
Preheat oven to 350°F (175°C).
Place the pie crust into a pie dish and flute the edges.
Spread pecan halves evenly across the bottom of the crust.
In a bowl, whisk eggs, corn syrup, brown sugar, granulated sugar, and melted butter.
Add bourbon, vanilla, and salt; whisk until smooth.
Pour the filling mixture over the pecans.
Bake for 50–55 minutes, or until the center is set and slightly puffed.
Cool completely before slicing to allow the filling to firm up.
- Use good-quality bourbon for the best flavour.
- Add chocolate chips for a chocolate-bourbon variation.
- Cover the edges with foil if the crust browns too quickly.
- Let the pie cool fully to avoid a runny center.
- Serve with whipped cream or vanilla ice cream for added richness.
