Ingredients
  

  • 1 unbaked 9-inch pie crust
  • 1 1/2 cups pecan halves
  • 3 large eggs
  • 1 cup light corn syrup
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 3 tablespoons bourbon
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Place the pie crust into a pie dish and flute the edges.
  • Spread pecan halves evenly across the bottom of the crust.
  • In a bowl, whisk eggs, corn syrup, brown sugar, granulated sugar, and melted butter.
  • Add bourbon, vanilla, and salt; whisk until smooth.
  • Pour the filling mixture over the pecans.
  • Bake for 50–55 minutes, or until the center is set and slightly puffed.
  • Cool completely before slicing to allow the filling to firm up.

  • Use good-quality bourbon for the best flavour.
  • Add chocolate chips for a chocolate-bourbon variation.
  • Cover the edges with foil if the crust browns too quickly.
  • Let the pie cool fully to avoid a runny center.
