For the Chicken
- 1½ lb (700 g) boneless, skinless chicken thighs or breasts
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika

For the Coconut Sauce
- 1 medium yellow onion, finely chopped
- 4 cloves garlic, minced
- 1 red bell pepper, thinly sliced
- 1 yellow or green bell pepper, thinly sliced
- 2 medium tomatoes, diced
- 1 can (13.5–14 oz / 400 ml) full-fat coconut milk
- ½ cup chicken broth
- 1 teaspoon smoked paprika
- ½ teaspoon ground cumin
- ½ teaspoon red pepper flakes, optional
- ¼ cup fresh cilantro, chopped
- Salt and black pepper, to taste
Prepare the Chicken
Pat the chicken dry with paper towels. Cut it into bite-sized pieces if using boneless chicken breasts or thighs.Season with salt, black pepper, paprika, cumin, and turmeric if using.
Brown the Chicken
Heat olive oil in a large skillet or Dutch oven over medium-high heat.Add the chicken in a single layer, working in batches if necessary. Cook for approximately 3–4 minutes per side until lightly browned.The chicken does not need to be completely cooked at this stage.Transfer it to a plate and set aside.
Cook the Aromatics
Reduce the heat to medium.Add the chopped onion to the same pan and cook for 3–4 minutes until softened.Add the minced garlic and cook for another 30–60 seconds until fragrant.
