Ingredients
  

  • 1 large fresh pineapple
  • ¼ cup brown sugar
  • 1 tablespoon melted butter or coconut oil
  • 1 teaspoon honey, optional
  • ½ teaspoon vanilla extract, optional
  • Pinch of salt
  • Fresh mint leaves, for garnish, optional

Instructions
 

Prepare the Pineapple

  • Cut off the top and bottom of the pineapple. Remove the outer skin and carefully cut away the core. Slice the pineapple into thick rings, wedges, or long spears.
    Thicker pieces work especially well because they remain juicy while developing attractive caramelized edges.

Make the Cinnamon Mixture

  • In a small bowl, combine the brown sugar, cinnamon, and a pinch of salt. Stir well.
    If desired, add melted butter or coconut oil, honey, and vanilla extract to create a richer coating.

Coat the Pineapple

  • Brush each pineapple piece lightly with the melted butter mixture. Sprinkle the cinnamon-sugar mixture evenly over all sides.
    Allow the pineapple to sit for about 5 minutes so the seasoning adheres to the fruit.

Preheat the Grill

  • Preheat an outdoor grill or grill pan to medium-high heat. Lightly grease the grates if necessary to prevent sticking.

Caramelize

  • Continue grilling until the pineapple develops deep golden-brown grill marks and the sugar becomes caramelized.

Serve Warm

  • Remove the pineapple from the grill and let it rest for 1–2 minutes. Garnish with fresh mint or a little lime zest if desired.
    Serve warm by itself or with a scoop of vanilla or coconut ice cream.
