Ingredients

  • 1 cup long-grain white rice
  • 2 cups water
  • 1 tablespoon vegetable oil or olive oil
  • 2 cloves garlic, finely minced
  • 2 tablespoons finely chopped onion, optional
  • ½ teaspoon salt, or to taste
  • Fresh chopped parsley or cilantro
  • A small drizzle of olive oil

Instructions

Rinse the Rice

  • Place the rice in a fine-mesh strainer and rinse it under cool running water until the water becomes mostly clear.
Allow the rice to drain thoroughly.

Heat the Oil

  • Heat the oil in a medium saucepan over medium heat.
Add the chopped onion if using and sauté for 1–2 minutes until softened.

Add the Garlic

  • Add the minced garlic and cook for approximately 30 seconds to 1 minute.
Stir constantly so the garlic becomes fragrant without burning.

Toast the Rice

  • Add the rinsed and drained rice to the saucepan.
Stir continuously for 1–2 minutes, allowing the rice grains to become lightly coated with the aromatic oil.
This step adds a subtle nutty flavor and helps create the characteristic Brazilian-style rice.

Add Water and Salt

  • Pour in the water and add the salt.
Stir once to distribute everything evenly.
Bring the water to a gentle boil.

Cook the Rice

  • Once boiling, reduce the heat to low.
Cover the saucepan with a tight-fitting lid and cook for approximately 15 minutes, or until the water has been absorbed and the rice is tender.
Avoid repeatedly lifting the lid while the rice cooks because this allows steam to escape.

Fluff and Serve

  • Remove the lid and gently fluff the rice with a fork.
Taste and adjust the salt if necessary.
Serve hot alongside your favorite Brazilian dishes.

Notes

  • Rice variety: Long-grain white rice works particularly well.
  • Rinsing: Washing removes excess surface starch and helps prevent overly sticky rice.
  • Garlic: Fresh garlic provides the best traditional flavor.
  • Oil: A neutral oil is commonly used, although olive oil also works.
  • Water ratio: A 1:2 rice-to-water ratio is a useful starting point, but different rice brands may vary.
  • Lid: Keep the lid closed while the rice cooks.
  • Resting: Don't skip the resting period after cooking.
  • Fluffing: Use a fork rather than a spoon to avoid crushing the grains.
