  • 2 cups roasted breakfast potatoes, diced

  • 1 tablespoon butter
  • 8 ounces breakfast sausage, cooked and crumbled

  • 2 green onions, sliced
  • ½ cup salsa

Seasonings

  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin

  • Salt and black pepper, to taste

Instructions
 

  • Whisk the eggs with the milk, salt, and black pepper until smooth.
  • Melt the butter in a large skillet over medium heat and gently scramble the eggs until soft and fluffy. Remove from the heat.
  • Cook the breakfast sausage in the same skillet until browned and fully cooked. Drain excess fat if needed.
  • Warm the cooked rice and black beans separately.
  • Roast or reheat the breakfast potatoes until crispy.
  • Season the potatoes with chili powder, cumin, smoked paprika, salt, and pepper.
  • Divide the rice among four serving bowls.
  • Top each bowl with black beans, crispy potatoes, scrambled eggs, and cooked sausage.
  • Sprinkle generously with shredded cheese.
  • Add the tomatoes, avocado, red onion, green onions, and cilantro.
  • Finish with salsa, sour cream, and a squeeze of fresh lime juice before serving.
